Roasted Red Potatoes

Makes about 6 servings.


2 lbs. red potatoes
1 T french thyme
1 T garlic paste
olive oil
cracked black pepper
kosher salt


1. Quarter red-skin potatoes, toss with olive oil and garlic paste to coat, sprinkle with thyme leaves, salt, and pepper to taste.

2. Bake until potatoes are tender and crispy (mix/turn potatoes halfway through cooking). For best results, cook for at least 20 minutes at 450 degrees F. Remainder of cooking time can be at any temperature >= 300.
