Cut the rappini into bite-size pieces. Cut larger pieces toward the tender, leafy end. Cut smaller pieces toward the stalk. Discard any part of the stalk that is tough or fibrous.
Toss in olive oil, salt, pepper, and garlic and bake at 375 for 18-23 minutes, OR cook in a skillet (partially covered) until tender (10 minutes).
