Black Pepper Green Beans

Makes about 4 servings.


2 lb. green beans
1 tsp. ground black pepper
1/2 tsp. thai fish sauce
1 tsp. olive oil
1 tsp. sesame oil
1 T. garlic paste (or more)
silvered almonds (optional)


  1. Heat oil in a cast iron skillet. Add garlic, green beans, and black pepper. Cover tightly and shake the pan to coat them in the garlic and pepper. Cook over medium heat.
  2. After 2 minutes, shake up or stir the beans so they don't burn, and cook 2 minutes longer.
  3. If using almonds, add them.
  4. Add fish sauce (and a bit of water if the green beans are burning).
  5. Cook for a final 2 minutes or until the beans are cooked to the desired consistency.
