Baked Rigatoni

Makes about servings.


1 lb. rigatoni or ziti pasta
1 cup tomato or vodka sauce (plus more for serving)
8 oz. garbanzo beans (chickpeas)
8 oz. spinach
1 egg
1 cup ricotta cheese
1/2 cup parmesean cheese
1/2 cup mozzarella cheese or italian blend


Mix all ingredients together, sprinkle additional cheese on top. Bake at 350 for 30 minutes or until cheese is melted and bubbly. Serve with heated tomato sauce.
